yesterday I went to quinta da regaleira . a mystical place dense with symbology . a place inhabited by mythological beings . a place I intended to go to for years . magical, from another era . the constant sound of the water . the green vegetation covering all around . the well, 27 meters deep vertigo celebrating the relationship between earth and sky . the delicate crafted stonemasonry in the tiny white chapel and in the main house . each room rich in beautiful details . handpainted walls as if wallpaper . a graceful lady in green (a goddess maybe!) on the dinning room wall . a dream .

I had the most wonderful day, a day I will remember as perfect. thank you so much for all your good wishes! :)

ontem visitei a quinta da regaleira . um lugar místico . um lugar habitado por seres mitológicos . um lugar onde há muito tinha intenção de ir . mágico, de outra era . o som constante da água . a vegetação verde cobrindo tudo em redor . o poço com 27 metros de vertigem celebra a ligação entre a terra e o céu . o trabalho delicado em pedra na pequena capela branca e na casa principal . cada sala rica em belos pormenores . paredes pintadas à mão como papel de parede . uma graciosa senhora (uma deusa talvez!) vestida de verde na parede da sala de jantar . um sonho .

sweet childhood

today I walked into my childhood days ... I walked in a vintage shop (probably the oldest in town) and suddenly the present and the outside vanished!
a grocery which remains pretty much as it always has been, even the scent of my primary schooldays is the same!
the owner, a 90+ year old, still goes about his business as he always did. only the packaging of products are like those you can find now in any other place. but not for these sweets! they are still sold by the weight like they were when I was a child and used to stop on the way back from school to buy a little bag of beijinhos (literally little kisses - the colored ones) and línguas de gato (cat's tongues - the plain ones) ... I left the shop carrying a little bag of just weighted sweetness ... sweet memories! :)

hoje entrei na minha infância ... entrei numa antiga mercearia (provavelmente a loja mais antiga da cidade) e de súbito o presente e o "lá fora" desapareceram!
a mercearia mantém exactamente as mesmas características dos meus dias de escola primária, até o cheiro é o mesmo!
o dono, o "sr. zé da loja" como sempre foi conhecido (não só ele mas também a loja em si) e que tem + de 90 anos, ainda continua a gerir o seu negócio como sempre o fez. só as embalagens dos produtos são modernas. mas não para os beijinhos e as línguas de gato que ainda são vendidos ao peso, da mesma forma de quando eu era criança e por ali passava no regresso da escola, para comprar um saco destes doces ... hoje deixei a loja com um saco de doçura acabada de pesar ... memórias doces! :)

the king cake

the king cake is a traditional portuguese cake that is usually eaten during the holiday season up until the "dia dos reis" (literally day of kings, a reference to the magi) on january the 6th. the cake is round with a hole in the centre, resembling a crown covered with crystallized and dried fruit.
the "bolo rei" is baked from a soft egg dough, with raisins, nuts and pieces of crystallized fruit. also included inside is a "fava" (dried broad bean), and tradition dictates that whoever finds the "fava" has to pay for the "bolo rei" next year. initially, a small gift was also included within the cake. however, the inclusion of this gift (usually a small metal trinket) was forbidden by the european union citing safety reasons ... christmas biscuit packets

what do you need for these easy packets ...
* sheets of transparent cellophane
* large muffin cases (I used the pretty ikea ones)
* something a little larger than the diameter of the cases to roll like an empty bottle
* scissors
* sellotape
* remnants of string or ribbon
* tags and something to write on them ... I obviously used the otchipotchi ones! ;)

roll a piece of cellophane around the bottle and tape it leaving enough to fold at the bottom . fold the bottom part and tape . remove bottle . insert one muffin case in the "tube" of cellophane . fill with your chosen biscuits up to half . tie with a bit of string or ribbon . write on the label and attach it to the string . enjoy your packing! :)

o que precisa para estes simples pacotes de biscoitos ...
* folhas de papel celofane transparente
* formas de queques em papel (eu usei as bonitinhas do ikea)
* algo do diâmetro um pouco maior das formas para enrolar como por exemplo uma garrafa vazia
* tesoura
* fita cola
* pedacinhos de fio ou fita
* etiquetas e caneta para escrever nelas ... é claro que eu usei as da otchipotchi! :)

enrolar um pedaço da folha de celofane na garrafa e deixar o suficiente para embrulhar na parte de baixo . colar a união com fita cola . dobrar a parte de baixo (como se estivesse a fazer um embrulho) e colar com fita cola . retirar a garrafa . colocar uma forma de queque dentro do "tubo" de celofane . encher com os biscoitos até meio . fechar com um pedaço de fita ou fio . escrever na etiqueta e atar .
divirtam-se e boas "embrulhadelas"! :)

chestnut and chocolate cake

it is delicious ... moist, soft, not overly sweet and rich! perfect for a special celebration.

é delicioso ... húmido, macio, não demasiado doce e rico! perfeito para um dia especial.
tenham um bom sábado ... amanhã haverá um pequeno "giveaway" ... não percam! ;)

*chestnut and chocolate cake* (the recipe, with slight changes, is from here !)
. 1 tbsp cocoa
. 200g cooked chestnuts, peeled
. 2 tbsp caster sugar
. 100ml full fat milk
. 100g butter
. 150g good quality dark chocolate chopped
. 3 large organic eggs
. 75g caster sugar
. 1 pinch sea salt
**************
. preheat the oven to 180°C/ 350°F
. butter a 20cm spring form tin and dust with the cocoa and take out the excess
. place the chestnuts in a small frying pan, add the 2 tablespoons sugar and milk and cook over a low heat for 5 minutes until the chestnuts start to soften
. remove from the heat and place into a tall cup of a blender or in a bowl of a food-processor and whiz until smooth . let it cool
. put the butter and chopped chocolate in a bowl over a pan of simmering water making sure the bottom of the bowl doesn’t touch the water and let it melt completely
. stir until smooth, remove from the heat and cool slightly
. whisk eggs, sugar and salt until thick, pale and doubled in volume
. carefully mix in the chestnuts puree until thoroughly combined
. gently add the melted chocolate mixture and fold in until smooth
. carefully pour into the prepared tin and bake on the middle shelf of the preheated oven for about 30 minutes until risen (it doesn’t rise high!) and the top has formed a light crust
. remove the cake from the oven and set the tin on a cooling rack and leave to cool to room temperature
. dust with cocoa powder and serve

. 1 colher (sopa) cacau em pó
. 200g castanhas cozidas e descascadas
. 2 colheres (sopa) açúcar
. 100ml leite gordo
. 100g manteiga
. 150g bom chocolate para culinária
. 3 ovos grandes
. 75g açúcar
. 1 pitada de sal

. aquecer o forno a 180°C
. barrar uma forma de fundo solto (20cm) com manteiga e polvilhar com cacau em pó
. colocar as castanhas numa frigideira juntamente com as 2 colheres de açúcar e o leite . levar ao lume brando durante 5 minutos até as castanhas começarem a ficar macias
. retirar do lume e triturar com a varinha mágica . deixar arrefecer
. colocar o chocolate partido e a manteiga a derreter numa tigela sobre uma panela de água a ferver (cuidado para a tigela não tocar na água!)
. quando estiver derretido, mexer bem até estar macio e deixar arrefecer um pouco
. bater os ovos com o açúcar e o sal até estarem esbranquiçados e terem aumentado de volume
. misturar com cuidado o puré de castanhas nos ovos e incorporar com cuidado o chocolate derretido
. colocar na forma e levar ao forno pré-aquecido durante 30 minutos (não cresce muito!)
. retirar do forno e deixar arrefecer completamente
. polvilhar com cacau em pó e servir

after a long working week, I found the time to get into the kitchen and do a bit of baking ... it feels good to bake in these rainy and windy days!

{apple, cinnamon and quince pie}

very simple to make! ... get some already made shortcrust pastry or make your own using any recipe you like (I made my own!) and with half of it line a pie dish. in a bowl mix 2 large cooking apples, peeled, cored and cut into small cubes, 1 large quince peeled, cored and finely sliced (I used a vegetable peeler for this), 2 tbsp demerara sugar and 1 tbsp ground cinnamon. fill the prepared dish with this mixture and cover with the remaining rolled out pastry sealing the top and bottom pastries with a bit of water. brush some milk on top and sprinkle with some sugar. goes in a preheated oven 190ºC for about 30 minutes. delicious served warm with cream but I decided on a more healthy option and served it with some natural yogurt ... enjoy! :)

depois de uma longa semana de trabalho, tive tempo para me meter na cozinha e fazer uma tarte ... sabe bem fazer coisas no forno nestes dias de chuva e vento!

{tarte de maçã, marmelo e canela}

muito fácil de fazer! ... usar massa quebrada de compra ou fazer usando uma receita que goste (eu fiz a minha!) e com metade desta forrar uma forma de tartes. numa tigela misturar 2 maçãs reineta descascadas, descaroçadas e cortadas aos cubos pequenos, 1 marmelo também descascado, descaroçado e cortado em fatias muito fininhas (eu usei o descascador de vegetais neste caso), 2 colheres de sopa de açúcar mascavado e uma colher de sopa de canela em pó. encher a forma preparada com esta mistura e cobrir com a restante massa estendida selando os bordos com um pouco de água . pincelar com um pouco de leite e polvilhar com açúcar. vai ao forno pré-aquecido 190ºC durante cerca de 30 minutos. é óptimo servido morno com natas mas eu foi por uma possível versão mais saudável e servi com iogurte natural ... divirtam-se! :)

on a side note ... it feels so strange these early autumn days, leaves are golden and falling covering the ground and temperatures reached 33º C today with people on the beach and open windows at night ... I even saw some jacarandas in bloom today ... very unusual!

quince jelly and paste

this week I made some quince paste (marmelada in portuguese) and quince jelly using some quinces I picked on saturday. making these preserves was a tradition at home when I was a very young girl and somehow it remains for me an announcement of the beginning of autumn ... here are the traditional recipes from my childhood days:

• marmelada (quince paste) •
you will need about 4kg of quinces and have in hand about 2 kg granulated sugar (I will tell you the exact sugar quantities during the recipe description)

• wash, dry, peel, core and cut the quinces into large chunks (reserve the peels and cores for the jelly below)
• place the prepared quince into a heavy based large wide pan
• cover with water and let it simmer covered until the quince is very soft, about 30 minutes
• drain (reserve the water) and puree the quince into a pulp
• now weight the pulp and for each 1 kg quince pulp add 800gr sugar
• return the pulp and sugar to the wide pan and let boil slowly stirring frequently (be careful so it doesn't stick to the bottom of the pan and when stirring be careful not to get burned as it tends to spit a lot - a good idea is to place a clean cloth over the pan when not stirring)
• you know the paste is ready when crossing the pan with the wooden spoon you can see the bottom of the pan for a few instants, the longer you can see the bottom of the pan the thicker the paste will be
• when ready let it rest for about 5 minutes before transferring into some clean and dry bowls
• place a waxed disk on top and label

• quince jelly •
you will need the cores and the peels of the quinces and have ready just over 1 kg of granulated sugar

• place the cores and peels of the quinces in a wide heavy bottom pan and cover with the water that was reserved from draining the quinces when making the paste ... if needed just add more fresh water
• let it simmer, uncovered until the liquid has reduced by almost half
• place a cheesecloth (or a clean old kitchen towel) over a sieve on top of a bowl
• pour the liquid and peels over the cheesecloth and squeeze as much liquid as possible through the cloth and sieve ... discard peels and cores
• measure the liquid and for each 1 litre add 800g of sugar
• return the liquid and sugar to the pan and let it simmer slowly until it has reduced for almost half again ... once in a while stir and remove some froth that forms on the surface
• test the jelly by placing a little on a saucer, let cool a bit and when pushed if it wrinkles it is ready
if not just let it boil for a few more minutes
• when ready, remove all the froth that formed on the surface, let it rest for about 5 minutes and place into clean, sterilized jars (to sterilize the jars I simply place boiling water inside and thoroughly dry them), close the jars and label

I think I will be giving some of these as christmas presents ;) ... enjoy! *

esta semana fiz geleia e marmelada com marmelos que apanhei no sábado.
o fazer da marmelada e geleia transporta-me aos tempos de criança quando lá em casa sempre se fazia e ficou para mim como que um anúncio do outono ... aqui ficam as receitas tradicionais desses tempos:

• marmelada •
cerca de 4kg de marmelos e 2 kg de açúcar granulado

• lavar, secar, descascar, descaroçar e cortar os marmelos em pedaços (guardar as cascas e caroços para fazer a geleia)
• colocar os marmelos num tacho largo de base pesada e cobrir com água
• tapar e levar a cozer em lume brando até os marmelos estarem macios, cerca de 30 minutos
• escorrer a água e reservar (para usar na geleia)
• reduzir os marmelos cozidos a polpa e pesar
• por cada quilo de polpa de marmelo juntar 800gs de açúcar
• colocar a polpa e o açúcar no tacho e levar ao lume brando mexendo com frequência (cuidado para não deixar queimar e quando estiver a mexer ter atenção pois "espirra" e pode queimar -normalmente coloco um pano da cozinha por cima do tacho para proteger)
• a marmelada está pronta quando ao passar com a colher de pau o fundo do tacho é visível por breves instantes, quanto mais tempo estiver visível mais compacta fica
• retirar do lume, deixar arrefecer cerca de 5 minutos e colocar em tigelas
• cobrir com um disco de papel vegetal e etiquetar

• geleia de marmelo •
as cascas, os caroços dos marmelos e a água onde cozeram e cerca de um pouco mais de 1 kg de açúcar

• colocar as cascas, caroços e a água de cozer os marmelos num tacho largo e de base pesada até cobrir (se necessário acrescentar um pouco mais de água fresca)
• levar a lume brando e deixar cozer até o líquido ter reduzido a cerca de metade
• colocar uma gaze (ou um pano de cozinha lavado) dentro de um passador largo em cima de uma tigela grande
• despejar as cascas e o líquido e deixar escorrer bem o máximo líquido possível através do pano ... descartar as cascas e caroços
• medir o líquido e por cada litro juntar 800gr de açúcar
• levar o líquido e açúcar ao lume brando no tacho destapado até ter reduzido a metade novamente mexendo ocasionalmente e retirando a espuma que se forma no topo
• para saber se está prontar colocar um pouco da geleia num pires e empurrar com o dedo, se fizer umas "rugas" está pronta, senão levar novamente ao lume e deixar apurar mais um pouco
• retirar do lume, limpar a espuma que se formou por cima e deixar arrefecer cerca de 5 minutos
• encher frascos esterilizados (eu apenas mergulho-os em água a ferver e seco-os muito bem) fechar bem e etiquetar

penso que alguns destes vão ser prendas de natal ;) ... divirtam-se!

for some odd reason today I felt nostalgic as I sensed the end of summer approaching ... I noticed how much shorter the days have become and how, for an instant, a glimpse of light was so much softer. it has been a wonderful summer and as much as I love autumn I'm not ready for this summer's end just yet!
I will try to be more present in here from now on ... it is just I have been enjoying my days amidst working and scattered days off and although I miss you all I have been feeling the need to be so much present in my own physical reality, in my world, in my days!

por alguma estranha razão hoje senti-me nostálgica ao aperceber-me do aproximar do final do verão ... notei como os dias estão tão mais curtos, como ao olhar a luz da tarde esta estava tão mais macia. tem sido um verão maravilhoso e apesar de adorar o outono não estou preparada para dizer adeus a este verão, pelo menos para já!
vou tentar estar mais presente por aqui de agora em diante ... simplesmente tenho estado a viver os meus dias entre trabalho e dias livres espalhados por ai e apesar de sentir saudades daqui tenho uma intensa necessidade de estar mais presente na minha realidade física, no meu mundo, nos meus dias!

a birthday cake I made for a special person ... his favourite cake without the yolks (in portuguese) which I dusted with a mixture of ground coffee, cocoa and a tiny bit of sugar! :)

yesterday was spent by the river just 10 minutes drive from home.
for lunch I made a tortilla following this recipe ... it turned out quite nice but next time I think I will replace the 5 large eggs for 4 medium ones. I prefer them less eggy! :)

ontem o dia foi passado junto ao rio aqui bem pertinho de casa, a 10 minutos da carro.
para o almoço fiz uma tortilha seguindo esta receita ... ficou muito bem mas para a próxima substituo os 5 ovos grandes por 4 médios. prefiro com menos ovo! :)
